dairy free hot chocolate

As I said in my post on my peppermint hot chocolate, I am planning on making a big batch of hot cocoa to share with my family on Christmas morning.  However, my mom (like many of my readers), is lactose intolerant.  Just because she can’t drink milk, doesn’t mean she should have to miss out on the heart warming, molten chocolate goodness of drinking hot chocolate on Christmas.  After trying several recipes, I came up with a formula for lactose-free hot cocoa that is (dare I say) even better, than it’s milky counterpart thanks to the addition of hazelnut spread.

Ingredients
1 cup water
4 oz. good quality dark chocolate
2 tablespoons dairy free chocolate hazelnut spread
1/8 cup white sugar
1/2 teaspoon peppermint extract (optional)

Heat the water in a medium-sized saucepan.
Once the water is warm, whisk in the chocolate, sugar and hazelnut spread, stirring until melted and steaming hot. For a thick hot chocolate, cook at a very low boil for about 3 minutes, whisking constantly. Be careful and keep an eye on the mixture, as it may boil up a bit during the first moments. Whisk in the peppermint extract and enjoy while hot.

    I tried this recipe today to combat the howling winds and freezing temperatures in NY, and you're right, this is just as thick and rich as a milk-based hot chocolate, and it was super easy to whip up. It's warming me inside and out as I type.

      Ohhhh yum! I am so jealous you have a cup of this right now (I could really use one!). There were some howling winds where I am today too, I can hear them rapping against my window! It's moments like these that I'm glad I'm indoors.

    Old post, but I just discovered your blog :). I'm lactose intolerant,and well as gluten free, and this sounds sooooo yummy! You could also try using lactose free milk, dairy free, or you could use a vegan alternative like almond or coconut milk. Those tend to work well for hot cocoa! Love the add in of peppermint.

    This sounds amazing! I am lactose free, and I would love to try this. I also make hot cocoa using Lactaid, not dairy free, or vega alternatives like almond or coconut milk which work pretty well. I must say I am inspired by your peppermint touch!
